Cream Cheese Walnut Cookies (4 dozen)
4 cups all-purpose flour
1 and 1/4 teaspoons salt
4 sticks unsalted butter, softened
6 ounces cream cheese room temperature
1 and 1/4 cups sugar
2 tablespoons plus 2 teaspoon vanilla extract
2 2 cups walnut halves (12 cups toasted and chopped; 1 cup finely chopped)
1. Whisk together flour and salt.
2. Put butter and cream cheese in the bowl and mix until pale and fluffy. Mix in sugar and vanilla. Mix flour mixture and toasted walnuts.
3. Divide dough in half and shape each piece into 9 inch long log (2 inched in diameter). Wrap each log in wrap and thick paper to keep it in good round shape, freeze until firm 30 min.
4. Preheat oven to 350 degree. Remove one log from freeze, roll in 2 cup chopped walnuts, coating well. Cut log into 1/4 inch thick rounds.
5. Bake 18 to 20 minutes.
